Default Did I do it wrong all together? (pan spread, Saffire Pro interface)

So when dealing with my stereo signals, I early on panned each signal completely to each side (first image) as this made the most sense to me (the two mono's would then capture the whole sound image). However, I now suspect each of these mono's should have been centralized as I believe they are stereo signals (2nd image). I have treated them as if they are mono.

When I listen to the stereo group (upload 3), alternative 1 (photo upload 1) gives me the whole spectrum but the very center image seems slightly dull, when I listen to alternative 2 there is more punch in the middle, and although I am able to hear sounds completely on each side,they are less apparent.

tl dr: judging by the two first screenshots, which would give me the most accurate stereo?

If I am not clear enough, please let me know.
