more exact db-level can be set when pressing CTRL (windows) while dragging the vol-fader

when it's on the tape its on the tape. Always try to get equal recording levels
when recording stepwise.
vol-editing in reaper can be done in the items itself like Fergler tried to
describe above. You can set the vol-level in the items properties (f2) with the
slider.
You can set a vol-level in the item itself when dragging the line (typically in
the middle of the item when not changed) (this is another level than the level
in the item-properties) with the mouse. the cursor will change when near the line.
Or you can draw a more complex vol-curve. In items properties (f2) you find
"Take Envelope", where you can select Vol, Pan, Mute an pitch envelopes.
those will be drawn into the item and can be handled like "normal" automationcurves
As a compressor is nothing else than an automatic vol-leveler you can try it with
f.i. the ReaComp to get proper levels along the track.
