Default Merge-Record MIDI

Is there a way to record new MIDI data into an existing MIDI take? "Merge" record mode or something.

For example, I'm using Garritan Personal Orchestra where I record a strings part, but don't find it practical to play the part, move the mod wheel, and do the legatos (sustain pedal) all at the same time. I also don't find it helpful to make all three parts separate tracks because then I can't readily see what MIDI controller data goes with what MIDI notes (separate track). I would like to record the notes, then the mod wheel moves, then the pedal, and then perhaps other MIDI controller knob-moving, onto the same track.

I just tried this with a pitch bend plug-in. It doesn't record.
Any clues?
