Thanks for the info. I eventually pieced together a process that works in Reaper, based largely on info in this video:

For the benefit of anyone else who struggles with this in the future - the steps that work for me are:
- Insert Virtual Instrument (Kontakt) on new track
- Say Yes to "do you want to add the following tracks?"
- In Reaper FX: Options->Build multichannel routing for output of selected FX...Yes
- Display Kontakt output panel (select Output icon at top)
- Click Add channels
- Select e.g. 4 (Qty) and 2 (Channels) - will create 4 stereo tracks
- Check Delete existing channels before creating new ones
- Click OK
- Click -|- button for st.1 channel
- Select physical out channels for left and right channels
- Click >> and repeat for other channels
- Close and reopen Kontakt window
- Add an instrument from the Kontakt library
- Select Output - set to one of the stereo outputs
- Select Midi ch: omni for instrument
- Add other instruments and repeat
