X/Y stereo or two mono tracks etc.?

I have a matched pair of C-2 microphones, i wanted to try them out as OH's, i have never recorded X/Y stereo, but and have used them (mono)a couple of times for toms because of the attenuation switch.

What are my options with Reaper?

01 - 1 stereo left and right track
02 - two mono tracks

is this the way?

i also have a couple of XC97 that are not matched, i have used these for recording OH's on two mono tracks, result was not bad but neither fantastic, just for the trivia does anybody think that i would be better off with the XC97's than the BEH.C-2's?
