My current setup is ...
Acer Predator laptop
Focusrite Scarlett Solo interface
Audio Technica AT2020 mic
Aokeo Pro pop sheild
Mogami Gold xlr for mic
I would like to ask if anyone has done home recordings that they felt were good enough to put up on itunes or spotify? Is that possible at hone without creating an entire studio?

Not sure if you mean "good enough for iTunes and Spotify" as in only needs to be good enough for the likes of them or if you consider them OK...
Either way, yes!
Performance is entirely in your control.
Mic position and technique are in your control.
Avoid just stupid room tone that gets in the way. Just a little bit of acoustic treatment and/or finding the spot in the room that works. Use your ears (eg. "Hey, it sounds good in this spot.")
