EZ drummer in reaper with e-drums - how to map

I hope I can ask an intelligent question here. I've been fiddling with EZ drummer for a couple days, and I'm getting close to actually using it. But I could use some help.
(1) I have installed EZ drummer and it is recognized in Reaper, and it mostly works.
(2) I'm using a Yamaha DTX kit - and I believe I have figured out how to connect this as a midi input that interfaces with EZ Drummer
(3) I'm able to play the drums along with a recording, to a degree.
I'm trying to simply map my drum pads to EZ Drummer sounds. Where I get confused is where EZ drummer uses channels for the drum kit. I picked a kit and I get channels 1-16, and they include most of your typical drums, plus OH, Amb, Amb Mono, Comp, One Shot, Shaker, Tamb, Perc. Amb. First of all, I don't know what those are. But more importantly, what they don't have it multiple toms, they don't have a floor tom, and they don't have a channel from crash and ride.
Maybe someone who knows better can tell me what a channel is and how do I assign actual drums to the channels? And how does a channel work with a midi map?
