how to disable or unbind nvidia audio device?
any chance to get rid of a pci nvidia card hdmi audio device?

Not sure if that can be done, why would you want to?
It probably uses the snd-hda-intel kernel module, so just blacklisting that module would remove other HDA soundcards too.

I was able to solve this issue (see above) this could be a reason for a IRQ conflict which happens rarely ..
