Default Custom control surface confusion

Hi folks, I've managed to make a simple custom control surface by duplicating the default.ReaperOSC file and then setting up a control surface using my new file, and I've successfully got max/msp doing things to reaper by sending osc messages. Woot!

but.... I don't understand the config files. Are the all caps settings in the left hand listed and documented somewhere? Is it possible for us to make new ones? Or are all the possible control surface targets listed in the default file and that's it? If there is documentation about this somewhere that I've missed (aside from the top level osc page), I'm all ears.
