Default render in mono or stereo

Help please. I am rendering a track to a stem so that everything is written to a new audio file that has all of my edits (particularly Melodyne, which uses a lot of power)

However when I reach the render menu I am given a lot of choices: mono, stereo,...

Which one should I choose? All of my tracks are recorded normally, that is I don't touch the mono or stereo button on the Master mixer (mono is grey) so I suppose I must be recording in stereo. So how does this affect my rendering option?

It mostly depends on what you want. I just leave it on stereo generally unless I'm playing with surround sound formats.

Mono might be useful for voice podcasts or AM/shortwave radio, I guess.

If you have recorded stereo (which is unlikely) you will see the two sides of the waveform. If you only see one your recording is mono.

If your render includes any stereo FX then render to stereo, otherwise I would stick with mono.
