It can be very confusing. Has been for me as well.
The best way I can explain it is that nothing gets committed unless you actually hit "commit" in the quantize dialog.
So there's 2 possible states. Quantized or Un-quantized (bypassed).
So you can always bypass anything selected or re-quantize things at any point. It always points back to the original performance. So it never stacks quantize on top of previous quantize.
So you can bypass at any time or re-quantize and it will always apply what you're currently adding to the original performance.
What makes this all confusing is that each not can be quantized completely different. And unless you do it again, it's hard to know what has already been quantized.
