how do i use many instances of a synth plugin to make a drum kit and…
…and program it with a single MIDI editor window?
I'm going to use FabFilter's Twin synth

i'm not sure i understand the question. Are you going to have one MIDI track that sends to the different instances (routed by MIDI channel) or are you intending to have each drum part on a separate MIDI track (which you then want to view together)?

yes, one midi track that sends to other tracks

ok, well set up sends to each instance, from your main MIDI track. Each send should be on a different MIDI channel. Then when you are editing / programming your MIDI track you can chose which sound by selecting the appropriate MIDI channel

you can select midi channels from the midi edit composing window?

you can set all the selected notes to any of 16 midi channels
and in the sends you specify what channel goes to what other channel
but if you are trying just to do drums... you might rather look into what reaper can off with its own RS 5000 FX...
Let's see if I can find the link to a ready made set up ...

Check you have the option for one midi editor per project ticked in MIDI Editor pref's.
Then create midi items for each track and group them.
This way you can use the track list to filter mute solo etc blah blah.
Check the template below.
