You could try this (but it would mean two tracks per amp sim)...
Track 1

- DI gtr input
- Record armed
- Record Monitoring on
- in Routing, Master/parent send disabled, and...
- ... pre-fader audio send to Track 2
Track 2
=======
- Amp Sim as insert FX
To record Track 2, you'd need to Record Arm it and set it to Record Output
